Sambal Prawn Thai Salad


Simple easy yummylicious salad...

For the prawn:
Ingredients:
  • one cup of shelled and deveined prawn
  • 1/2 onion sliced
  • 1 teaspoon of sambal (uses the one I posted earlier)
  • 1 teaspoon of olive oil
Methods:


  1. Saute the onion till it is soft and turn brown.
  2. Add in the sambal and then the prawn. Lightly stir after 2mins and let the prawn cooked well on both side (dry and slightly brown and crispy).
  3. Set it aside (best leave it on the pan you use to fry it).

For the tong fun (bean vermicelli):
Ingredients:
  • one packet of the bean vermicilli
  • 2cups of hot water
  • 2 birds eye chilli (chopped to small pieces)
  • 1 lime (juiced)
  • 1 teaspoon of fish sauce
  • few dashes of sesame oil
  • 2 teaspoon of soy sauce
  • 1.2 teaspoon of brown sugar
Methods:
  1. Soaked the vermicelli in the hot water for about 20mins
  2. Mixed all the rest of the ingredients.
  3. Once the vermicelli is soften and break when u try to bite it, it is ready, drained off the water.
  4. Mixed the sauce with the vermicelli and set aside
Rest of Ingredients:
  • 2 cups of mixed salad leaves (washed and dried)
  • 1/2 big tomato, cut to cube
  • half carrot, shaved julienned
  • 1 cup of thinly sliced wombok (chinese cabbage)
  • 1 tablespoon of lime juice
  • 1 tablespoon of fish sauce
  • 1/4 teaspoon of brown sugar
  • 1/2 teaspoon of soy sauce
  • 1 handful of chopped mint leaves and parsley
Methods:
  1. Pre marinate the carrot, wombok with lime juice, fish sauce, soy sauce and brown sugar. Set aside for at least 2hours.
  2. Tossed all the prepared ingredients, the prawn, carrot, wombok, and the vermicelli with the salad leaves and tomato in the mixing bowl.
  3. Served... :D

My Own Version of Cucur

Yesterday, I started with the first version, prawn only snd the batter is not so right. Today fid a little modification. This is estimated measurement:


1. 1cup flour

2. 1 small egg

3. 1/4 teaspoon soda bicarbonate

4. 1/4 water

5. Pinch of salt n pepper

6. A handful of chopped chicken n prawn

7. 1 teaspoon of chopped parsley

8. Oil to fry


Mixed everything other than the oil till the batter is gluey like the pic. Use the spoon to drop the batter on the heated oil. Flip after bout a min, medium fire. Fry another min and dish out.

Prawn Noodle



Ingredients:

- 450g of prawn and shell (remove shell and head and keep aside for the soup), deveined
- sawi (no kangkung in my fridge), roughly 200g
- 4 pieces of dried lar mien (my mom got that from klang for us)
- 6 cups of water for the soup and another 6 cups to cook the noodle
- 1 tablespoon of cane sugar
- pinch of salt
- pinch of pepper
- 2 teaspoon of miso
- 1 tablespoon of sweet soy sauce
- half onion (chopped to small pieces)
- 1 tablespoon of oil
- 1 tablespoon of sambal (dont ask recipe coz I got this fr my mom and dunno how it was prepared..)
- one piece of ginger (roughly bout 3cm size)

Method:
1. Boil the shell with the water and ginger for about 5mins. Leave it for another 5mins and remove the shell. Add in sugar and miso.
2. Boil the water and add in the noodle. Turn off the fire once the water boil again and leave the noodle there.
3. Heat up the wok, add in oil and saute the onions. Add in the sambal, and fry till it is fragrant.
4. Drain the noodle and add in to the wok. Lightly stir it.
5. Add in the soup, sawi and sweet soy sauce. Cover the wok and let it boil.
6. Mix the prawn with pepper and salt. Pour in to the wok. Cover for bout 2mins.
7. Done, ready to serve.

* Excluding the preparation of the soup, it takes about 15mins to cook the dish.

Pork + Prawn Burger





  • 500g of pork (lean meat)



  • 50g of prawn



  • 1 pinch of pepper



  • 1 pinch of salt



  • 6 pieces of button mushrooms



  • 1 teaspoon of dried fish flake



  • 1 shallot



  • 1 egg



  • 2 teaspoon of corn flour



  • 3 tablespoon of peanut oil for frying







  1. Blend all the ingredients except for corn flour, egg and oil till well mixed.



  2. Add in egg and flour and blend for another 20 seconds.



  3. Scoop one and half tablespoon and formed to a burger patty.



  4. Fry the burger patty on the pan till both side is golden brown.

Char Kuew Tiow






  • 1 tablespoon of oil

  • 4 cloves of chopped garlic

  • 1 bunch (300g) of kuew tiow - blanched with hot water for 3mins

  • 2 tablespoon of kicap manis (sweet dark soy) - A

  • 1 tablespoon of chilli paste - A

  • 2 tablespoon of soy sauce - A

  • 4 prawns

  • 1 egg

  • 1 dash of pepper

  • 1 bunch of parsley



  1. Saute garlic with prawns.

  2. Once the prawn is cook, set aside.

  3. Add in kuew tiow, and stir fry for few mins.

  4. Add in all the A ingredients and stir well.

  5. Break the egg and cover the kuew tiow with it.

  6. Keep stirring, season with pepper.

  7. Dish and serve with prawn and parsley.

Kuew Tiow Prawn Soup






  • 100g prawn shell

  • 2 tablespoon of oil

  • 3 cloves of chopped garlic

  • 1 shallot - chopped

  • 1 tablespoon of chopped ginger

  • 1 tablespoon of sugar

  • 2 cups of water

  • 2 portion of kuew tiow

  • 6 pieces of prawn

  • 2 cups of cut cucumber

  • 1/4 teaspoon of salt

  • 1 teaspoon of soy sauce

  • 3 cloves of chopped garlic

  • 1 tablespoon of oil

  • 50g chopped pork

  • 3 pieces of mushroom, sliced

  • 1 tablespoon of chilli paste



  1. Saute shallot for a min, add in garlic and ginger.

  2. Add in prawn shell just before garlic turn golden.

  3. After 3 mins, add in water and sugar.

  4. Sieve and leave aside.

  5. Fry pork with oil, add in garlic. Add in prawn and fry till the prawn is cook. Set aside only the prawn.

  6. Stir in chilli and kuew tiow.

  7. Add in the prawn soup, salt and soy sauce.

  8. Once it boil, add in mushroom and cucumber.

  9. Dish and serve with prawn.

Fry Priwn Roll





  • 100g of fish meat (I uses mackerel)

  • 30g of pork

  • 3 medium size prawn (shell removed)

  • 1 teaspoon of corn flour

  • 1 medium size brinjal (cut to 8 long pieces)

  • 8 pieces of beancurd / soy sheet (bout 5cm width and 10cm length)

  • 1 teaspoon of miso paste

  • A pinch of salt

  • 1/8 teaspoon of pepper

  • 3 tablespoon of oil for frying



  1. Mashed and chop the fish meat, pork and prawn till they are well mix.

  2. Season with salt, pepper and corn flour. Leave it in the freezer for 5 mins.

  3. Soaked beancurd sheet in water for a min, drain dry.

  4. Lightly dry each sheet on the pan with medium fire.

  5. Rub miso paste on the surface of all the brinjal.

  6. Lay the brinjal and mixed priwn paste on th beancurd sheet.

  7. Roll up the sheet.

  8. Heat up the oil and pan fry the roll till the priwn is cooked.

  9. I served it with brown sauce.

Prawn + Mushroom




  • 8 medium size prawns (I left the shell on, but should remove it to taste better)


  • 8 square pieces of cheddar cheese (size of 2cm by 2cm)


  • 8 pieces of soaked dried chinese mushroom


  • 1 cube of butter


  • A pinch of salt and pepper to marinate prawns


  • 3 tablespoon of water


  • 1 teaspoon of fish sauce


  • A pinch of mixed herbs





  1. Saute mushrooms with butter for 2mins.


  2. Add in prawns and saute till prawns are cooked.


  3. Place mushroom on the plate and sandwich the cheese with prawns.


  4. Do not wash the pan, add in water, fish sauce and herbs. Leave water to boil and pour over the mushroom.


  5. Put in microwave on high for 15 seconds to melt the cheese.

Butter Fry Prawn




  • 16 pieces of medium size prawned, shelled, vein removed and cut to semi half, season with salt, pepper and some sugar

  • A pinch of mixed herb.

  • 3 tablespoon of melted butter



  1. Heat up butter. Add in prawn and fry till cook.

  2. Dish out and sprinkle with mixed herb

Spicy Prawn Dip




  • 1 red chilli, chopped finely


  • 1 birdeye chilli, chopped finely


  • 2 pieces of shallot, chopped finely


  • 1 teaspoon of onion, chopped finely


  • 2 teaspoon of ginger, chopped finely


  • 3 teaspoon of preserved radish (choy po), chopped finely


  • 1 teaspoon of fish sauce


  • 1 teaspoon of thai chilli paste


  • 3 teaspoon of sukiyaki sauce


  • 2 teaspoon of oil


  • 1 teaspoon of sugar


  • 1 teaspoon of honey


  • 1 cup of prawn shell


  • 2 cups of water





  1. Heat up oil (1/2 teaspoon) and fry the prawn shell.


  2. Once all the shell turn red, add in water and leave it to boil for about a min.


  3. Sieve the stock out.


  4. Heat up the balance of the oil. Fry all the finely chopped ingredients till fragant.


  5. Mix the prawn stock with the rest of the ingredients.


  6. Add in the mixture to the frying items in pan.


  7. Once boil, dish out. Served after it is cool.

Butter Fish




  • 400g of fish slice (marinate for 2 minutes with salt and pepper, coat with some corn starch)


  • 4 pieces of medium size prawn


  • 50g of butter


  • 5 tablespoon of skim milk


  • 2 birdeye chilli


  • 5 pieces of curry leaves


  • 1 teaspoon of ginger (sliced)


  • 2 teaspoon of cream cheese


  • 2 pieces of white button mushroom


  • 2 teaspoon of thick corn starch


  • Oil to fry





  1. Pan fry the fish till it is cooked. Dish out and leave it on serving plate.


  2. Melt the butter and saute the prawn with curry leaves, chilli and ginger.


  3. Once the prawn is cook, add in mushroom, cream cheese and milk.


  4. Once the milk boils, add in corn starch.


  5. Serve the sauce over the fish.

Sweet Sour Prawn





  • 200g medium size prawn (left with only tail intact, deveined)


  • 5 pieces of curry leave


  • 2 teaspoon of lime juice


  • 2 pieces of birdeye chilli


  • 1/2 chopped onion


  • 3 pieces of garlic (chopped)


  • 2 tablespoon of tomato sauce


  • 2 pieces of tomatoes


  • 1 teaspoon of oyster sauce


  • 1 tablespoon of chilli sauce


  • 1 teaspoon of thick corn starch mixture


  • 3 tablespoon of water


  • 1 teaspoon of oil





  1. Saute onion and curry leave till fragrant. Add in the birdeye chilli and garlic.


  2. Add in lime juice, water and tomato sauce, tomato, chilli sauce,oyster sauce.


  3. Add in the prawn and leave it to boil for 2 minutes.


  4. Thicken the sauce with thick corn starch mixture.

Prawn Noodle








    • 300g of prawn's shell (clean)

    • 50g of rock sugar

    • 1 teaspoon of oyster sauce

    • 1 teaspoon of salt

    • 24 pieces of medium size prawn (marinate with salt and pepper)

    • 2 pieces of hard boil egg (I left this out coz out of egg)

    • 200g of spinach (should use kangkung or bean sprout, but I was not having that too) - blanched

    • 1.5l of water

    • 2 tablespoon of garlic

    • 5 slices of ginger

    • 1 teaspoon of oil

    • 100g of chicken fillet, cut to small pieces (marinate with salt, pepper and corn starch)

    • 1pack of Spaghetti (should use yellow noodle, but I prefer Spaghetti)

    • Fried shallots and garlic



    1. Saute the prawn shell in the pot. Add in garlic, ginger and stir fry till it turn golden color.

    2. Add in water to boil. Leave it to boil for about 5 mins. Add in rock sugar, oyster sauce and salt.

    3. Sieve the soup and set aside.

    4. In a separate pot, boil the spaghetti with some olive oil and salt.

    5. Add in another teaspoon of oil (from the fried garlic and shallot) and fry the chicken fillet. Add in prawn after 1 min.

    6. Arrange the spaghetti, chicken fillet, prawn and vege in the bowl.

    7. Laddle the hot prawny soup to the bowl. Serve with fried shallot/garlic.

Sambal Prawn




  • 500g fresh prawn (remove the shell, leave the tail and deveined)


  • Sambal paste (refer to previous recipe)


  • 2 tablespoon of oil


  • 1 teaspoon of salt


  • 1 tablespoon of sugar


  • 2 tablespoon of tomato sauce


  • 1 teaspoon of oyster sauce


  • 1 cup of water


  • 3 tablespoon of thick coconut milk





  1. Clean the prawn.


  2. Heat up the oil and saute the sambal paste.


  3. Add in prawn and fry for one minute.


  4. Add in water and leave it at low fire for few minutes till prawn is cooked.


  5. Add in all other ingredients.
