Tuna Muffin

It has been a long time since I last posted any recipe. Again, this is my own recipe.


Ingredients:

  • 2 small cans of tuna (I uses one with spring water and the other is corn with mayo)
  • 50g butter (melted)
  • 30g flour
  • 1/8 teaspoon of baking powder
  • 1 handful of endamame beans
  • 30g shredded mozzarella
  • 1 egg
Steps:
  1. Preheat oven at 180C.
  2. Mix all the ingredients till even.
  3. Scoop to the muffin mould.
  4. Bake for 15mins at 180C

Bake Yao Char Kueh



  • 4 pieces of yao char kueh (semi fried)

  • 1/2 can of tuna in oil (remove oil)

  • 1 tablespoon parmesan cheese (powdered or chopped to small pieces)


  1. Stuff the tuna on the middle slit of the yao char kueh.

  2. Sprinkle the parmesan cheese on top of the tuna.

  3. Bake for 10mins under 180 degree celcius.

Bake Tunaballs




  • 2 cans of tuna in brine


  • 2 tablespoon olive oil


  • 2 tablespoon of organic kibble rye


  • 1 teaspoon of sea salt


  • 1/4 teaspoon of freshly ground black pepper


  • 1 teaspoon mixed dried herbs


  • a handful of fresh flat-leaf parsley, chopped


  • 1-3/4 cups stale breadcrumbs


  • 4 tablespoon of freshly grated Parmesan


  • 2 eggs


  • zest and juice of 1 lemon


  • 1 tablespoon of flour


  • Aluminium foil





  1. Mix all ingredients together, except for olive oil.


  2. Scoop two teaspoon of mixture to form a ball. Lay those tuna balls on a tray layed with aluminium foil.


  3. Drizzle olive oil over the tuna balls and bake for 20 mins at 140 degree celcius.


  4. Alternatively, the tuna balls can be pan fried.

Wasabi Bake Tuna








  • half a piece of tuna (big eye tuna) - bout 400g, cut few slits diagonally across the fish

  • 2 teaspoon of wasabi paste - marinate

  • 1/4 teaspoon of salt - marinate

  • 1 teaspoon of teriyaki sauce - marinate

  • 1 teaspoon of mix indian fish spices

  • 1 teaspoon of sesame oil

  • few slices of ginger, cut thinly

  • 1 tablespoon of chopped onion

  • 1 piece of aluminium foil




  1. Marinate tuna with the marinate ingredients for few mins.

  2. Place tuna on the aluminium foil.

  3. Place ginger and onion on top of the fish.

  4. Drizzle sesame oil over the fish.

  5. Bake for 25mins under 190 degree celcius heat.

Bread Toast




  • 1 tablespoon of peanut butter


  • 1 tablespoon of Chives Mixed Fruits Jam


  • 3 tablespoon of Tuna Mayo


  • 1 pinch of pepper


  • 2 slice of oats bread (or plain)





  1. Lightly toast the bread.


  2. Cover one side of the bread with peanut butter and tuna mayo.


  3. Top the tuna with some pepper.


  4. Cover the other slice of bread with jam... and place the two together and done.
