Buttery Spicy Macaroni + ABC Chicken Soup
Had a very funny odd combo dinner few days back, buttery spicy macaroni + ABC Chicken Soup...
I mixed 3 tablespoon of evaporated milk, 1 tablespoon of butter, 1 tablespoon of chopped chilli, 2pcs of chopped shallot, 1 tablespoon of fish sauce, 1 tablespoon of oyster sauce, 1 tablespoon of thai smoke fish paste chilli and 1 tablespoon of thai chilli sauce.

Pineapple Curry Pork Rib
Marination
Without the flash
Ingredients:
- 5 shallots (cut to slices) - A
- 4 cloves of garlic (cut to slices) - A
- 1 inch of lemon grass (cut to slices) - A
- 8 pieces of dried chilli (seeds removed) - A
- 1 tablespoon of pomfret fish sauce - for marinate
- 2 tablespoon of hoi sin sauce - for marinate
- 1 tablespoon of maggi seasoning sauce - for marinate
- 1 tablespoon of curry powder - for marinate
- 2 tablespoon of corn flour - for marinate
- 1 teaspoon of salt - for marinate
- 1/8 teaspoon of pepper - for marinate
- 250g of pork rib (wash cleanly)
- 1.5 cups of water.
- 12 cubes of pineapple (can type) with 2 tablespoon of the sweet brine
- 10 pieces of curry leaves (wash clean and dry)
- 2 tablespoon of peanut oil
- 1 cup of chopped parsley.
Steps:
- Blend all the A ingredients and pour in to a mixing bowl.
- Add in all the marinate ingredients to it.
- Add in the pork rib and mix evenly till all pork is covered with the marinate. Marinate for at least 4 hrs (I have mine for 6).
- Heat the oil and saute the curry leaves till fragant.
- Stir in the pork with all the marinate ingredients.
- Stir fry to seal the juice pork and add in water after few mins.
- Leave it to cook at low fire for about 35mins.
- Pour in the pineapple and the sweet brine and stir. Cook for another 10mins.
- Add in the parsley and off the fire. Stir the parsley evenly. Dish and served.

Spicy Mayo Dip
Ingredients:
- 2 teaspoon of mayonaisse
- 1 teaspoon of teriyaki sauce
- 1 teaspoon of thai smoked fish chilli paste
Steps:
Mix all ingredients till the mixture get smooth.

Spicy Dried Noodle
- 1 piece of dried noodle (bout the same size as the normal instant noodle)
- 2 cups of water
- 1 piece of shallot - chopped - A
- 1 tablespoon of soy sauce - A
- 1 teaspoon of sesame oil - A
- 1 teaspoon of fish sauce - A
- small pinch of salt - A
- dash of pepper - A
- Mix all the A ingredients and leave aside.
- Boil the water and boil the noodle in it for about 2mins.
- Drain noodle. Toss noodle on the A mixture.

Char Kuew Tiow
- 1 tablespoon of oil
- 4 cloves of chopped garlic
- 1 bunch (300g) of kuew tiow - blanched with hot water for 3mins
- 2 tablespoon of kicap manis (sweet dark soy) - A
- 1 tablespoon of chilli paste - A
- 2 tablespoon of soy sauce - A
- 4 prawns
- 1 egg
- 1 dash of pepper
- 1 bunch of parsley
- Saute garlic with prawns.
- Once the prawn is cook, set aside.
- Add in kuew tiow, and stir fry for few mins.
- Add in all the A ingredients and stir well.
- Break the egg and cover the kuew tiow with it.
- Keep stirring, season with pepper.
- Dish and serve with prawn and parsley.

Kuew Tiow Prawn Soup
- 100g prawn shell
- 2 tablespoon of oil
- 3 cloves of chopped garlic
- 1 shallot - chopped
- 1 tablespoon of chopped ginger
- 1 tablespoon of sugar
- 2 cups of water
- 2 portion of kuew tiow
- 6 pieces of prawn
- 2 cups of cut cucumber
- 1/4 teaspoon of salt
- 1 teaspoon of soy sauce
- 3 cloves of chopped garlic
- 1 tablespoon of oil
- 50g chopped pork
- 3 pieces of mushroom, sliced
- 1 tablespoon of chilli paste
- Saute shallot for a min, add in garlic and ginger.
- Add in prawn shell just before garlic turn golden.
- After 3 mins, add in water and sugar.
- Sieve and leave aside.
- Fry pork with oil, add in garlic. Add in prawn and fry till the prawn is cook. Set aside only the prawn.
- Stir in chilli and kuew tiow.
- Add in the prawn soup, salt and soy sauce.
- Once it boil, add in mushroom and cucumber.
- Dish and serve with prawn.

Spicy Taufu
- 1 box of soft taufu
- 2 clove of garlic, sliced
- 1 tablespoon of oil
- 2 tablespoon of chilli paste
- 1 teaspoon of fish sauce
- 1 teaspoon of soy sauce
- 1 pinch of salt
- 1 tablespoon of curry powder
- 1/4 cup of cornstarch water solution (2 teaspoon of cornstarch with water)
- 1/4 cup of water
- Saute garlic with oil till golden. Add in chilli paste.
- Add in taufu and water.
- Once the water boil, add in the rest of the other ingredients except for cornstarch water solution.
- Once the mixture boil, add in cornstarch solution to thicken the sauce.

Grilled Cabbage with Spicy Sour Sauce
- 1/2 cabbage, sliced side way (bout 50g)
- 1 table spoon of cubed cheddar cheese
- 1 tablespoon of butter (sliced to small pieces)
- 1/2 bombay onion - chopped
- 1 egg
- aluminium foil to grill the cabbage
- 1 kaffir leave (cut to small slices)
- 2 teaspoon of thai chilli paste with smoked fish - for sauce
- 2 teaspoon of sukiyaki sauce - for sauce
- 1 teaspoon of plum sauce - for sauce
- 2 teaspoon of evaporated milk - for sauce
- Mix all the sauce ingredients evenly and leave it aside.
- Place onion on the aluminium foil. Top with cabbage, butter and cheese.
- Grill for 30mins.
- Top the cabbage with creamy fried egg and the sauce.

Grill Fish
- 1 piece of aluminium foil, bout 20cm by 10cm (fold to half)
- 1 piece of fish (size depending on how many pax served), slit some lines across the fish
- Few slices of ginger
- Some salt and pepper to marinate fish (for 5 mins)
- Lay the ginger on the foil. Place the fish on top of the ginger.
- Grill over 190 degree celcius for 25 mins.
- Served with some spicy dip.

Spicy Dip
- 2 teaspoon of lemon juice
- 1 tablespoon of thai chilli paste
- 1 teaspoon of fish sauce
- 1 tablespoon of soy sauce
- 2 tablespoon of chopped shallot
- Mix all ingredients together and voila, done.

Spicy Prawn Dip
- 1 red chilli, chopped finely
- 1 birdeye chilli, chopped finely
- 2 pieces of shallot, chopped finely
- 1 teaspoon of onion, chopped finely
- 2 teaspoon of ginger, chopped finely
- 3 teaspoon of preserved radish (choy po), chopped finely
- 1 teaspoon of fish sauce
- 1 teaspoon of thai chilli paste
- 3 teaspoon of sukiyaki sauce
- 2 teaspoon of oil
- 1 teaspoon of sugar
- 1 teaspoon of honey
- 1 cup of prawn shell
- 2 cups of water
- Heat up oil (1/2 teaspoon) and fry the prawn shell.
- Once all the shell turn red, add in water and leave it to boil for about a min.
- Sieve the stock out.
- Heat up the balance of the oil. Fry all the finely chopped ingredients till fragant.
- Mix the prawn stock with the rest of the ingredients.
- Add in the mixture to the frying items in pan.
- Once boil, dish out. Served after it is cool.

Sweet Spicy Topshell
- 1 can of topshell (about 200g)
- Half a medium size onion (ring slice)
- 2 garlic (coarsely chopped)
- 1 teaspoon of olive oil
- 1inch of ginger (sliced)
- 1 teaspoon of chili paste
- 2 teaspoon of tomato sauce
- 2 tablespoon of water
- 1 teaspoon of brown sugar
- Saute the onion with oil. Add in ginger and garlic after it fragrant.
- Add in topshell, chili paste, tomato sauce and water.
- Once the water boil, add turn off the fire and add in the brown sugar.

Butter Fish
- 400g of fish slice (marinate for 2 minutes with salt and pepper, coat with some corn starch)
- 4 pieces of medium size prawn
- 50g of butter
- 5 tablespoon of skim milk
- 2 birdeye chilli
- 5 pieces of curry leaves
- 1 teaspoon of ginger (sliced)
- 2 teaspoon of cream cheese
- 2 pieces of white button mushroom
- 2 teaspoon of thick corn starch
- Oil to fry
- Pan fry the fish till it is cooked. Dish out and leave it on serving plate.
- Melt the butter and saute the prawn with curry leaves, chilli and ginger.
- Once the prawn is cook, add in mushroom, cream cheese and milk.
- Once the milk boils, add in corn starch.
- Serve the sauce over the fish.
