Braised Chicken Feet Mushroom Noodle

Recently I ordered mushroom chicken feet noodle at hubby's favourite cafe and not very happy with the chicken feet. It was not fried and does not give that wonderful texture and flavour it deserves. So I thought I should make this myself instead.

What more the shop charged $9.80 for it with yellow noodle only... hmmm...

See the photos below. The first two pics are mine and the last is from the shop.  Btw, I didn't serve that much sauce on mine coz was trying to reserve it for my girl for dinner later.. :D



This is the $9.80 one.




Ingredients:

  • bout 15 chicken feet, washed and nails area chopped off
  • 10pcs of mushroom, soaked
  • 2tbsp oyster sauce
  • 4pcs of star anise
  • 1tsp sesame oil
  • pepper
  • half cup soy sauce
  • 2tbsp dark soy sauce
  • 6cloves garlic, skin removed
  • 1tbsp oil
  • 6 slices of ginger
  • a small piece of palm sugar roughly the size of 2cm by 3cm by 1cm
  • a cup of water
Methods:
  1. Pat dry the chicken feet and air fry at 200c for roughly 15 to 20mins, Shake them in between. It is ready when it is golden brown color. Set aside to cool. The original recipe asked to have the fried chicken feet soaked in ice cold water to give that crinkle look but I skip that. And please note, the chicken feet discharge quite some amount of oil during the frying process, so do have a layer of paper lined underneath the basket or the pan of the AF prior to frying to avoid smoke from being discharge from the machine.
  2. Heat up the pressure cooker under saute high mode. Once heated, add in the oil, ginger, garlic and star anise. Fry for bout 30seconds or till the ingredients start to give nice smell.
  3. Add in the mushroom and oyster sauce and stir fry for another min.
  4. Finally add in the rest of the ingredients, cover the lid and set the pressure cooker to meat mode. That should keep the pressure for 15mins. At this stage, please note that the liquid should be sufficient to cover the chicken feet otherwise it won't be soft and flavoursome.
  5. Once the pressure valve drop, your chicken feet mushroom is ready to be served with either rice or noodle of your choice.

Glutinous Rice Wrapped in Lotus Leaf and Chicken Stuffed with Glutinous Rice Wrapped in Lotus Leaf




My neighbour had given me some lotus leaf that she had bought and I had been having it in the kitchen for quite sometime not knowing what to use it for yet. And then I bumped into this recipe in FB and thought of trying it out with a tweak.

With the pressure cooker, I actually don't need to pre soak the rice but since I need to get rid of the phytic acid, so, I soaked it for bout 3-4hours prior to using it.

Here goes the recipe:

Ingredients
  • 2pcs of lotus leaf, pre soaked with hot water
  • 1 small young chicken (mine is 1.2kg)
  • 2.5cups of glutinous rice, soaked for 3-4hrs
  • 2tbsp shiao thing wine for chicken marinate
  • 1tsp five spices powder for chicken marinate
  • a small pinch of pepper for chicken marinate
  • a big pinch of sea salt for chicken marinate
  • 1 chinese sausage, skin removed and diced
  • 2 pcs of chinese mushroom, reconstituted and diced (water used keep aside)
  • 3 pcs of dried scallop, soaked and water keep aside, shred to small pieces
  • 3tbsp dried shrimp, soaked, water disposed
  • 2 cloves of garlic, chopped
  • 1 big pc of shallots, sliced
  • 1/4 cup of carrot, diced
  • a small pinch of garlic powder for the rice
  • a small pinch of sea salt for the rice
  • a small dash of pepper for the rice
  • 4tbsp oil
  • some strings to tie
  • 3 pcs of big aluminium foil
Methods:
  1. Marinate the chicken and set it aside.
  2. Heat up the oil on the cooking wok. Once hot, add in the shallot and saute till it is almost brown. Add in the sausage and garlic and fry till fragrant. 
  3. Add in the carrot, mushroom, scallop and dried shrimp. Stir fry till the shrimp get crispy.
  4. Add in the rice and the water retained and stir fry till the water dry up. Season with the seasoning listed for the rice and stir for it to mix evenly. Leave it to cool.
  5. Stuff in as much rice as possible into the chicken cavity. Press it down and continue stuffing till it is full. Then use the string to tie the bottom of the drumstick to avoid the filling from falling out.
  6. Wrap the chicken with a layer of lotus leaf. Then wrap it with the aluminium foil to ensure no leakage and to maintain moisture. I had left mine to heat for few hours coz I was out for school pick up and the chicken is still moist and just right.
  7. Then place the rest of the rice onto the other piece of lotus leaf. Fold it up from the top, bottom then right and finally left. Tie the parcel up with the leftover string.
  8. Place 2 cups of water into the pressure cooker, then the aluminium foiled wrapped chicken and finally the rice wrapped in lotus leaf. Cover the pressure cooker's cover, set to bake mode (which is 45mins) and start. Remember to set the valve to bake mode.
  9. Voila, once pressure released, the food is ready to be served. :D
*Note: I'm using the Philips electric multi cooker which has the pressure cooker and bake mode.

Chinese Mixed Porridge

Ok, lately I had gone a little crazy with multigrain meals and just saw in the drama they are eating porridge and suddenly, I thought of  cooking porridge.

So, just went to cook some with the left over multi grain rice.


Ingredients:

  • 1/2 cup of cooked multi grain (quinoa, millet, rice and brown rice)
  • 3 dried mushrooms, cut to small pieces
  • 1/4 cup pumpkin, cut to small cube
  • 1 piece of Y pork, leftover from braised pork the night before (cooked with minced ginger, minced garlic and preserved beans)
  • 1/4 cup of beetroot, cut to small cube
  • 1/2 salted egg, cut to small pieces
  • 1/2 century egg, cut to small pieces
  • a handful of english spinach
  • 3 cups of water
  • some shredded ginger
Steps:
  1. Put all ingredients except for spinach and ginger in the pressure cooker.
  2. Cook on high for 10mins and lower down the fire for 20min.
  3. Let the pressure cooker release pressure. Once open, stir in the spinach.
  4. Served and garnish with shredded ginger.

Steamed Glutinous Rice

Everytime someone posted something I like on Facebook, it gets me wanting to cook them. And here it is steamed glutinous rice. Cooked this few times de but just didn't blog down the recipe each time.



The glutinous rice served with a quick curry chicken.


Ingredients:

  • 2 cups of glutinous rice (I uses the thai one this time), soaked for 3hrs with cold water
  • 4 tablespoon of finely chopped shallots
  • 2 tablespoon of finely chopped garlic
  • 2 pieces of lap cheong (waxed sausage), cut to small slices (roughly 0.5cm each) 
  • 3 pieces of chinese dried mushroom, soaked and cut to small slices
  • 1 big handful of dried shrimp, soaked and roughly chopped
  • 1/8 teaspoon of five spice powder
  • 1 tablespoon of oyster sauce
  • 1/8 teaspoon of salt
  • a big dash of pepper
  • 4 tablespoon of oil
  • a big handful of chopped spring onion for garnishing
Steps:


  1. Heat up the oil and fry 1/2 tablespoon of the shallots. Once brown and crispy, set aside for garnishing.
  2. Heat up some water in the steamer.
  3. Then fry the lap cheong for about a 1min before adding in the  dried shrimps.
  4. Stirring for another 1 min, add in the shallots. When they are about to brown, add in the garlic and mushroom.
  5. Finally stir in the rice and seasoning. Cook for about 4-5mins.
  6. Scoop the rice into a bowl and leave it to steam for about 20-30mins, depending to how soft you want the rice to be. My hubby likes it "al dente" so I had mine steamed bout 25mins.

Ham Choy (Salted Vege) Taufu Soup

Ingredients:
  1. 1-2 blocks of soft silken Taufu (depend to how much taufu you want to have in your soup) - I use those fr the market small pieces one, not the box packet from supermarket
  2. 50g of salted vege (pre soaked in water) - cut to slices
  3. 3 cups of ikan bilis stock (add some ginger in it)
  4. 2pcs of sour plum
  5. half a white promfret (lightly marinated with pepper and salt) - cut to bite pieces
  6. few slices of squid
  7. 2 pieces of fresh shitake mushroom (sliced)
  8. 1 tomato (chopped to small pieces)
  9. pepper for seasoning

Steps:

  1. Bring the stock to boil.
  2. Add in sour plum, salted vege, tomato and mushroom.
  3. After about 2 mins, add in taufu, fish and squid.
  4. Season with pepper before serving.

Bake Fishy Potato

We had bake potato with fish paste yesterday:




Ingredients:
  • 600g fish paste
  • 1 black fungus, soaked and chopped finely
  • 1 chinese mushroom, soaked and chopped finely
  • 1 tablespoon of chopped carrot
  • a pinch of salt
  • a pinch of pepper
  • 1 tablespoon of oyster sauce
  • 1 tablespoon of corn flour
  • 1 tablespoon of kicap manis (sweet soy sauce)
  • 2 potato washed and sliced to 0.5cm thickness each
  • 2 teaspoon of sesame oil

Steps:

  1. Mixed all the ingredients (except for potato and sesame oil) evenly.
  2. Spread the mixture on top of the potato and bake under 180 degree celcius heat for 15mins.
  3. Take it out and drip one drop of sesame oil on each and put back in the oven (turn off the heat). Leave it for 5mins..

Nutrient Packed Porridge

Had this really nutrient packed porridge for dinner today, tomoto, mushroom, fishball, egg, cranberry bean, black beans and crispy fried garlic (tipu a bit, use microwave).





Served with coriander fish (no chicken)... taste so so... hubby said too strong coriander taste, while I think I prefer plain bake fish... hehehe...

Fish Cake Pizza

Hubby had been asking me to make pizza for him for quite some time, but I was just lazy. Since its public holiday here in Miri for the past two days and I had gotten the ingredients, here we are, having fish cake pizza for super early dinner (5pm)...hehehe...


Gotten the recipe for the Dough from this Easy Pizza Dough Recipe website:


  • 1 cup of warm water (105F)


  • 3 1/2 cups of all-purpose flour


  • 2 tablespoons of olive oil


  • 2 teaspoons of honey


  • 1 teaspoon of salt


  • 1 teaspoon of yeast



Mix the water, yeast, honey and salt and leave it for 10mins. Later pour the mixture over the flour and olive oil and mix till you get a dough. Leave it to sit for 30mins, covered. Then punch off the air, knead and let it sit for another for another 30mins.


Divide the dough to two portion (made two pieces, and if u prefer thinner crust, can make up to three), and flatten it to the shape of the crust you like. If you prefer it thinner, just make sure u role it really thin (it will get a little big after baking). Use the fork to poke holes all over it.




Spread some tomato sauce + mayo over it. Start laying the other ingredients on it. I used dried chinese mushroom, fishcake, pineapple, onions, crabstick, and some sesame seed + mixed herbs. Bake at 200 degree Celsius for 20 mins, and take it out to add cheese (dont have mozzarrella, so uses cheddar instead). Bake for another 5mins.... Done, ready to serve.

Lor Mai Kai









  • Quarter chicken cut to bite sizes (700g)

  • 1 tablespoon of oyster sauce - marinate

  • 1 teaspoon of five spice powder - marinate

  • 1 teaspoon of pepper - marinate

  • 2 tablespoon of rice wine - marinate

  • 1 tablespoon of soy sauce - marinate

  • 1 teaspoon of teriyaki sauce - marinate

  • 2 tablespoon of corn flour - marinate

  • 3 cups of glutinous rice - soaked for about 4hrs

  • 1 cup of water

  • 5 tablespoon of garlic

  • 2 teaspoon of shallot

  • 1 tablespoon of oil

  • 4 chinese dried mushrooms (soaked and sliced)

  • 50g sliced pork

  • 1 pinch of salt - pork marinate

  • 1 pinch of pepper - pork marinate

  • 1 teaspoon of hoisin sauce - pork marinate

  • 1/2 teaspoon of soy sauce - pork marinate

  • 9pcs of dried musssels

  • 2 tablespoon of dried shrimps

  • 1/2 tablespoon of oil

  • 9pcs of aluminium bowl

  • 3 cups of water for steaming

  1. Marinate chicken with the marinate ingredients for 4hrs.

  2. Marinate pork sliced with pork marinate ingredients for 4hrs

  3. Saute shallot for 1mins and add in garlic. Fry till almost golden, add in glutinous rice.

  4. Fry the mixture for 2 mins, add in water and steam till water fully absorbed. Set aside.

  5. Use the 1/2 tbsp oil to fry the dried shrimps. After 1min, add in dried mussels. Fry for 2mins and set aside.

  6. Lay chickens, mushrooms, pork, dried mussels and dried shrimps on the aluminium bowl.

  7. Cover it with the glutinous rice.

  8. Steam over boiling water for 20mins.

  9. When serving, cup the aluminium bowl over a plate and the lor mai kai will come off. Served with chilli sauce.
