Flaky Curry Puff

This is not the first time I made curry puff, but this is the first time I attempted the so called karipap pusing style of puff, the pastry is so flakey and crispy.

As usual, I'll attempt both the oil fried version as well as air fried version.

And since we ran out of potato to make a big batch of filling, we had baked beans cheese filling and tuna cheese filling for a twist.

Since I had posted the basic karipap recipe earlier, I'll just skip the filling recipe here and go straight to the pastry only.

Ingredients:

  • Water dough
    • 360g plain flour
    • 150g cake flour/low protein flour
    • 1tbsp caster sugar
    • 2tsp salt
    • 150g butter, cubed
    • 200ml water
  • Butter dough
    • 250g cake flour/low protein flour
    • 150g butter
Steps:
  1. First, put all the ingredients (except water) for the water dough in the food processor and whizz them up. Slowly add in the water. It will looks a little like bread crumb texture once everything is well mix. Pour them out and knead into a dough. That should take roughly 2mins. Set aside
  2. Next, put in the ingredients for the butter dough in the food processor and do a quick whizz to let the butter mix with the flour. It will be very very crumbly texture. Pour them out and knead into a sticky dough. That will take about 10-15mins. Set aside along with the water dough in the fridge for about 10-15mins, covered.
  3. Take the dough out and roll the water dough out till large rectangle and sprinkle generously with flour. I rolled mine to roughly the size of 8cm by 16cm.
  4. Then roll the butter dough out to roughly half the size of the water dough. Place it on top of the water dough. Fold the water dough over and cover the butter dough.
  5. Then roll the dough out again and fold over again. Do this another time before rolling out the dough into a long roll.
  6. Cut it into small sizes (I think I cut up to 20pcs).
  7. Roll out the small pieces into round flat pieces, fill up with the fillings that you had prepared and cool down and shape as per your preference.
*You may either fry in oil or the air fryer for 15mins at 180c.
* You can also store in freezer in pieces to maintain the shape for 10mins before transferring into the bag for storing.

Sweet Potato Bread


Not sure bout the consumer, but the maker is a bit bored with plain white or chia seed or milo bun, so for a change, we are having sweet potato bread this time round.

Slight change to the original recipe that I had found from To Food with Love (she uses purple yam and butter, I used sweet potato and oil and too heavy handed on the overnight sponge).

Ingredients:

Part 1

  • 300g bread flour
  • 35g sugar
  • 1/2tsp or 3g salt 
  • 1.5tsp or 5g yeast
Part 2
  • 100g Overnight 5c batter, recipe from here
Part 3
  • 145ml cold milk
  • 30g egg (roughly 2/3 of a L size egg)
Part 4
  • 120g sweet potato
  • 30g olive oil

Method:

  1. Mix the ingredients from part one till well mixed then add in part 2 and part 3. Knead all the ingredients to form a dough either manually or using Bread Machine or your mixer using the dough hook.
  2. Next add in ingredients from part 4 and continue to knead till it form a smooth and elastic dough. My dough is rather soft and a little sticky.
  3. Leave the dough to rise/proof in a warm place for roughly bout 45mins to an hour till it is almost double in size. I covered the mixing bowl with a wet towel to keep it moist.
  4. Punch the dough down and knead it briefly. If your dough is like mine kinda sticky, oil your work surface and your hand to ease the handling of the dough. 
  5. Cut the dough to shape according to your preference. If you planning to make bread slices, roll the dough out flat and rolled it up. Place it in the baking tin (lightly oiled) to proof for another 1hour to 1hr15mins. Make sure you leave some space for the dough to rise or get bigger.. :D
  6. Preheat oven at 180c for roughly 10mins.
  7. After proofing, brush the dough with the balance of the egg.
  8. Bake at 180c for 20-25mins depending on your oven's heat.
  9. Remove and cool the loaves before trying to slice it.

Pretzels



This is my third or maybe fourth time making pretzels. First was a total failure, I can't shape the dough, it is too sticky and the yeast didn't rise too. Second time around, I think I soak it in the wrong solution... hehehe... and finally the third is a success. At this last round, I had used bread flour instead of plain flour and the texture is more chewy and the dough is much easier to work with. So if you prefer it softer, plain flour and if you prefer it chewy, the bread flour.





Ingredients:

  • 500g flour or bread flour
  • 8g yeast
  • 28g sugar
  • 1.5 cups of warm water
  • 5g salt
  • 1 cup water for the soda bath
  • 2 tablespoon of baking soda for the soda bath
  • 3 tablespoon of melted butter for coating
  • seasalt for sprinkling
Steps:
  1. Mix all the ingredients except the last 4 items into the mixer and knead them till smooth and form a nice dough. Leave it to rise for about 30mins (make sure you oil the container before putting in the dough and cover the container).
  2. Just 2 mins before  you are ready to shape the dough, prepare the soda bath by mixing the water and baking soda in a shallow bowl. Also leave the salt on a plate to make it easier to dip the top of the pretzel with it.
  3. Also oil two baking trays or using the non stick mat.
  4. Divide the dough to 12 pieces and roll them to long pieces. Then twist it, dip it in the soda bath (the entire dough) and tip the top with sea salt.
  5. Preheat the oven at 220C while leaving the pretzels to rise again for about 10mins.
  6. Bake the pretzels for 12-15mins. 
  7. Once brown, remove from the oven immediately and coat it with the melted butter.

Pao Dough Recipe

Ingredients:
200g low protein flour
150g flour
35g corn flour
2 tablespoon sugar
2 tablespoon yeast
50g warm water (I used 20% room temp water and 80% of 85 degree water)
150g water
1 cup flour

Steps:
1. Mix the sugar, yeast and warm water together, leave it to rise bout 5mins.
2. Sieve and mix the flour evenly (except the 1 cup).
3. Pour in the yeast mixture in the middle of the flour mixture, mix well before adding in the water and knead till it form a dough.
4. Knead till the dough becomes even and smooth. If too soft, add a bit more flour and if too dry, add in a bit more water.
5. Leave it to rise for bout 30mins. Knead again. Then leave it to rise another 20mins.
6. Lightly knead it and then cut to small pieces and shaped as per required or fill with filling prepared.

Okara Fish Chicken Potstickers

Ingredients:
Fillings

  • 500g chicken fillet
  • 4 tablespoon of okara
  • 4 tablespoon of fish paste
  • 1 tablespoon of chopped cilantro
  • 4 tablespoon of shredded carrot
  • 3 cloves of shredded garlic
  • 2cm of shredded ginger
  • 1 teaspoon of 5 spice powder
  • 1/8 teaspoon of pepper
  • 2 teaspoon of salt



Dough

  • a pinch of salt
  • 3.5cups of flour
  • 1 cup of water


Steps:

  1. Blend everything of the fillings ingredients in the blender, then leave in fridge to chill.
  2. Use the mixer to mix all the dough ingredients. Then use the hand to knead. Cut to small pieces and form round balls. If the dough is sticky, use more flour to cover the tabletop and your palm.
  3. Flatten the dough, use the rolling pin to roll it to flat round pieces of dough.
  4. Filled in the filling (approximately 1.5 teaspoon, depending on size of the dough).
  5. Pleat the dough.
  6. After all done, heat up the non stick pan with a little oil
  7. Place the potstickers on the pan, fry one side for bout 1min, then turn. Add bout 1table spoon water. Cover the pan and let all the water dry. Dish out and continue with the rest.
  8. Serve with dipping sauce.

Hokkaido Bread

Another baking session, thanks to Han Ker's class (hope she doesnt mind that I share out her great recipe)..

I had a great time pounding and hitting the dough... good stress release..



As the second rest ask for certain warm temperature and yesterday was raining and rather cold, what I did was I placed the dough and tin on top of a pot of just boiled water to create the warm feeling... it takes bout 50mins to get to almost double it's size.

Scones


Suddenly feel like resurrecting this blog and put up some recipes. Attended a baking class last Saturday and one of the item learnt is scones.

Just need to note that the instructor uses a gas oven and hence it is not as hot as electric oven, but of course it also depends to the type of oven u use.

Ingredients:
100g low protein flour
100g flour
8g soda powder
10g granulated sugar
80ml milk
100g butter
raisins and chopped chocolate (amount depending to how much u like, but roughly 3/4 cup)

Instructions:
1. Mix the raisins and chopped chocolate together.
2. Mix the first four ingredients together. Then use a mixer to blend in the butter (cut to small pieces, need to be cold). Texture should be like bread crumbs.
3. Add in the milk and combine the mixture till it sticks together. Divide to two, press it down. Add on the raisins and chopped chocolate on top of one piece and the top it with the 2nd half.
4. Wrapped the dough in cling wrap and chill it in the fridge for 30mins (or freezer for 10mins).
5. Roll the dough to bout 2cm thickness, use any shape cutters to cut it out.
6. Transfer the dough to the baking sheets (oiled with butter). Brushed some milk at the top of the dough.
7. Bake for 25mins (recipe says 30mins) at 180 degree Celsius. To check if cooked, it should be golden brown in color and when u poke a toothpick in, it should come out clean. :D
8. Remove from oven and cool it.

Chicken Puff

This is not the crispy type of puff, but is those fluffy and soft one.. just like dumpling. It was made with the failed dough for my pao... hubby says it taste good.
